C’est grâce au boucher, Pierre-Louis Duval, que les premiers bouillons naissent en 1855 à Paris. En proposant un plat unique de viande et un bouillon aux travailleurs des Halles, Monsieur Duval connaît un grand succès et grâce à lui on compte, en 1900, plus de 200 bouillons à Paris. Ces bouillons deviennent la première chaîne de restauration populaire en France.

Les bouillons d’aujourd’hui proposent des plats français en respectant trois règles : bon, rapide et pas cher.
